Baked Cod with Dijon Mustard
Adapted from MAMMA'S RECIPES

  • 4 Cod Fillets
  • 2 tbsp Olive Oil
  • 2 tbsp Dijon Mustard
  • 1 Lemon (cut into wedges)
  • Fresh ground salt and pepper
  • 1 tbsp fresh chopped parsley

  1. Preheat oven to 425 degrees.
  2. Rinse cod.
  3. Cut into serving size fillets.
  4. Place cod in ovenproof baking dish and drizzle the olive oil over each piece.
  5. Salt and Pepper to taste.
  6. Brush dijon mustard onto cod.
  7. Bake fish (10-20 minutes depending on thickness, mine was thick and took 20 minutes).

  8. While the cod is baking you can chop your parsley.
  9. Serve with a lemon wedge and parsley sprinkled on top.
