Baked Cod with Dijon Mustard
Adapted from MAMMA'S RECIPES
Ingredients
- 4 Cod Fillets
- 2 tbsp Olive Oil
- 2 tbsp Dijon Mustard
- 1 Lemon (cut into wedges)
- Fresh ground salt and pepper
- 1 tbsp fresh chopped parsley
Instructions
- Preheat oven to 425 degrees.
- Rinse cod.
- Cut into serving size fillets.
- Place cod in ovenproof baking dish and drizzle the olive oil over each piece.
- Salt and Pepper to taste.
- Brush dijon mustard onto cod.
- Bake fish (10-20 minutes depending on thickness, mine was thick and took 20 minutes).
- While the cod is baking you can chop your parsley.
- Serve with a lemon wedge and parsley sprinkled on top.
